Recipe for baked egg custard

Baked egg custard with mixed berry compote

Recipe for baked egg custard.

3 eggs
1 egg yolk
50g caster sugar
1/2 tsp vanilla extract
450ml milk
pinch of nutmeg

you will also need 4 ramekins


  1. Preheat oven to 170c gas mark 3.
  2. Whisk eggs, egg yolk, sugar and vanilla together, then add milk and whisk again.
  3. Pour the mixture into 4 ramekins.
  4. Sprinkle with nutmeg
  5. Bake in a bain marie for 30 minutes, until set in the middle.

Great on their own also good served with berry compote.
