Asparagus tart recipe
For the asparagus tart you will need:
  • 250g puff pastry
  • 175g asparagus blanched
  • 2 eggs beaten
  • 1tsp oregano


First roll out your pastry into a rectangle about 3 mm thick score an edge around and prick the centre with a fork to stop it from puffing up too much.

Place the pastry onto a baking sheet and bake for 10 minutes at 180c gas mark 4
Then place the blanched asparagus spears onto the pastry, pour over the beaten egg and sprinkle on the oregano.

Bake for a further 20 minutes until egg filling is set and the pastry is golden brown.
