Recipe for Toad in the hole

Tasty Thursday # 5 - Recipe for Toad in the hole

Toad in the hole

250g sausages or quorn sausages
100g plain flour
250ml milk
1 egg
25ml vegetable oil
Pinch of salt

4 tbsp oil
1 onion peeled and finely chopped
4 tbsp flour
450ml water
1 stock cube, dissolved in the water
1 tsp yeast extract

Ovenproof dish, mixing bowl, sieve, fork, measuring jug, hand whisk, saucepan, wooden spoon, chopping board, knife, jug

  1. Preheat oven to 220oc or gas mark 7
  2. Arrange sausages spaced apart in ovenproof dish. Add oil and put in oven
  3. Sieve flour into mixing bowl and add pinch of salt
  4. Make a well in the centre of the flour
  5. Put milk in measuring jug, crack egg into jug and beat with fork
  6. Add milk and egg mixture into the centre of flour a little at a time and beat with whisk until smooth
  7. Remove sausages from oven (they should be sizzling)
  8. Quickly pour batter over top
  9. Return to oven immediately and bake for 40 mins.
  10. It should be golden brown and well risen when cooked.

To make the gravy
  1. Heat the oil in a saucepan, add the onion and cook over a low heat for 5 minutes.
  2. Stir in the flour and cook for a further 5-10 minutes until browned
  3. Add the stock, bring to the boil and then simmer for 10 minutes
