Made on Monday – River cottage veg – herby peanut noodle salad

I am the first one to admit that as soon as the weather turns colder I think ‘yes! no more salad. Bring on the stodge!’ But this salad may make me change my mind as I could eat this all the time. I have been working my way through the river cottage veg book and this is by far my favourite recipe. It is light, citrus and has a great variety of textures. Everything you would want in a vegetarian meal.

Tasty Thursday – chocolate and cherry tiffin recipe

A very rich, very chocolaty treat. Be careful though it can be crumbly and trodden in chocolate is not what you want on your carpets. I speak from experience.

You will need:
225g digestive biscuits (graham crackers), crushed
100g dried cherries
100g butter
25g sugar
3 tbsp cocoa powder
4 tbsp golden syrup
225g plain chocolate

  1. Tip the crushed biscuits and the cherries into a large mixing bowl.
  2. Melt the butter, sugar, cocoa powder and golden syrup over a low heat in a saucepan. Once melted combine the butter mixture with the biscuits in the mixing bowl.
  3. Press the mixture into a 8” square tin and leave to cool.
  4. Once cool, melt the chocolate in a bowl over simmering water, then spread it over the top of the biscuit mixture.
  5. When set cut into squares using a sharp knife.

I just had to share this as I just think it is so cute and I am currently weighing up the options of making a whole load of these for Christmas. I made it as another decoration for Georges advent calendar. Yes, I am still working on it but think it would look great in a whole shaker style display maybe for the entrance hall. If I decided to go for it, of course I’ll post pics.

Sweet Saturday – peanut butter cookies recipe 

140g self raising flour
115g margarine,
165g caster sugar,
1 egg
1 tsp vanilla extract
265g crunchy peanut butter.

  1. Cream the margarine and sugar together.
  2. Gradually mix in the beaten eggs and the vanilla.
  3. Stir in the peanut butter.
  4. Stir in the flour.
  5. Refrigerate for 30 minutes until firm
  6. Preheat the oven to 180c gas mark 4 and grease two baking trays.
  7. Roll out teaspoonfuls of the dough into balls and place on the baking trays.
  8. Flatten with a fork.
  9. Bake for 12-15 minutes.
  10. Transfer to a rack to completely cool.
