Sweet Saturday - peanut butter cookies recipe 

140g self raising flour
115g margarine,
165g caster sugar,
1 egg
1 tsp vanilla extract
265g crunchy peanut butter.


  1. Cream the margarine and sugar together.
  2. Gradually mix in the beaten eggs and the vanilla.
  3. Stir in the peanut butter.
  4. Stir in the flour.
  5. Refrigerate for 30 minutes until firm
  6. Preheat the oven to 180c gas mark 4 and grease two baking trays.
  7. Roll out teaspoonfuls of the dough into balls and place on the baking trays.
  8. Flatten with a fork.
  9. Bake for 12-15 minutes.
  10. Transfer to a rack to completely cool.
