Christmas cake recipe

Christmas cakes

150g self raising flour
75g margarine
75g caster sugar
2 eggs
200g dried mixed fruit – including cherries
Grated rind of 1 orange
1 tbsp ground almonds
200g marzipan
250 ready roll icing
1 packet of assorted coloured ready roll icing

  1. preheat oven to gas mark 3 /170 c
  2. line 7 inch cake tin with greaseproof paper
  3. cream the fat and sugar until light and fluffy
  4. mix in the eggs
  5. fold in the flour
  6. fold in the dried fruits
  7. pour into tin and bake for 45 minutes to 1 hour
  8. cool
  9. cover with marzipan and then icing
  10. decorate
