150g self raising flour
75g caster sugar
200g dried mixed fruit – including cherries
Grated rind of 1 orange
1 tbsp ground almonds
250 ready roll icing
1 packet of assorted coloured ready roll icing
- preheat oven to gas mark 3 /170 c
- line 7 inch cake tin with greaseproof paper
- cream the fat and sugar until light and fluffy
- mix in the eggs
- fold in the flour
- fold in the dried fruits
- pour into tin and bake for 45 minutes to 1 hour
- cover with marzipan and then icing

I am not the biggest fan of dried fruit it has to be said. Yet at this time of year they seem to pop up in all sorts of recipes. You can't help bumping into them when you start doing your Christmas baking. Cranberries however I do like and these Cranberry muffins with a warming hint of cinnamon are just the thing to start off your festive baking.
