Easter Bunny’s garden cake

Just a quick one from me today. I just wanted to share with you an early Easter cake I made for the boys. I used the chocolate cake recipe from my blog which you can find here. Then I made the icing look like a vegetable patch by dragging a fork through it. I then dyed some desiccated coconut green and edge the cake with that for grass. Finally I made some carrots out of fondant icing and cut hole for them in the top of the cake, so they were actually ‘planted’. The boys loved it and it made a change from the usual Easter treats we make.

There are many great food combos but one of my favourites is coconut and lime. Like a great cocktail, it transports me to a place with white sandy beaches and clear blue seas. So what could be better than that, combined with cake? Even better with a cuppa.

 Gluten free Coconut and lime cake

Ingredients

  • 225g Dove’s self raising gluten free flour
  • 225g caster sugar
  • 225g butter
  • 4 eggs
  • 50g desiccated coconut
  • zest of 1 lime
  • 2 tbsp of lime juice
  • 2 tbsp milk

For the icing

  • 125g icing sugar
  • 1 tbsp lime juice
  • Zest of 1 lime
  • 1 tbsp of desiccated coconut

  1. Preheat the oven to 180c gas mark 4
  2. Line a 7” deep round baking tin.
  3. In a mixer, mix the flour, caster sugar, butter, milk and eggs until well combined.
  4. Stir in the coconut, lime juice and zest.
  5. Spoon the mixture into the lined tin and level.
  6. Bake in the oven for 1 hour, until risen and firm to the touch.
  7. Leave to cool in the tin for 5 minutes and then cool on a wire rack.
  8. To make the icing, sift the icing sugar into a large mixing bowl.
  9. Add the tbsp of lime juice and mix until the icing coats the back of the spoon.
  10. Spread onto the top of the cooled cake and top with the zest and the tablespoon of desiccated coconut.

This cake is great for looking impressive but nice and simple to make. A great cake for a slice in the afternoon with a cup of tea.

Free embroidery flowers pattern pdf

 I thought I would share with you something a bit different today. These are a set of five floral design embroidery templates. They are free to download. You get two pdf files one with the image shown and instuctions on how to sew the designs and the other with an A4 size set of templates. You can resize them if you want using your printer at home.


I have not included any advice on thread or colour choices as I will leave that up to you.
Straight off the printer, each design measures no larger than 8cm x 8cm, but it can easily be scaled up or down with your computer or copier.

Gluten free Sweet potato and feta salad recipe
Ingredients

  • 800g sweet potato
  • 2 1/2 tbsp olive oil
  • 1 red onion
  • 100g mixed leaf salad
  • 100g feta
  • 2 tbsp pumpkin seeds
  • 1 1/2 tbsp balsamic vinegar
  • 1/2 tbsp olive oil
  • 1 tbsp honey
  • 1/2 tbsp wholegrain mustard

Method

  1. Simmer 800g of sliced sweet potato in water for about 5 minutes until just tender.
  2. Drain and cool. 
  3. Toss with 2 tbsp of olive oil and season.
  4. Heat a griddle pan and cook the sweet potato slices for a few minutes on each side.
  5. Slice the red onion finely and cook in the griddle pan until caramelized.
  6. In a serving bowl or platter layer 100g mixed leaf salad.
  7. Layer over the onion and crumble on 100g of feta.
  8. Top with the slices of sweet potato and add 2 tbsp of pumpkin seeds.
  9. Whisk 1 1/2 tbsp of balsamic vinegar, 1/2 tbsp of olive oil, 1 tbsp honey, 1/2 tbsp wholegrain mustard together.
  10. Drizzle the dressing over the top of the salad.

Bang Bang Quorn chicken salad

Bang Bang Quorn chicken salad 


Ingredients

  • 4 quorn chicken fillets
  • 1 tbsp oil
  • rice wine vinegar
  • 2 chopped spring onions
  • 1tbsp toasted sesame seeds
  • 2 tbsp peanut butter
  • 2 tsp sesame oil
  • 1/2 a cucumber cut into batons
  • 2 carrots, peeled and cut into strips
  • 2 spring onions shredded
  • 50g sugar snap peas
  • 2 tbsp salted peanuts, toasted
Method
  1. Fry the fillets in the tbsp of oil until browned on both sides. Toss with the chopped spring onions and a splash of rice wine vinegar.
  2. Put the sesame seeds and peanut butter into a small pan, heat and add 2 tbsps of water to make a sauce. Stir in 2 tsp of sesame oil.
  3. Slice the fillets.
  4. Dived the fillets and salad between two plates and drizzle on the sauce.
  5. Top with the toasted peanuts.

Ingredients

  • 175ml sunflower oil
  • 200g caster sugar
  • 100g ground almonds
  • 50g white breadcrumbs
  • 2tsp baking powder
  • 4 eggs
  • zest of 5 clementines
  • For the syrup
  • 75g caster sugar
  • juice of 3 clementines

Method

  1. Preheat the oven to 180c gas mark 4.
  2. Grease and line a deep 20cm tin
  3. In a mixer whizz all the cake ingredients until fully combined.
  4. Tip into the prepared tin and bake on a low shelf for 50-55 minutes.
  5. As the cake cools peel two of the zested clemtines and slice into circles.
  6. Make the syrup by combining the 75g caster sugar and the juice of the remaining zested clementines in a saucepan.
  7. Bring to the boil and allow to bubble for 3 minutes
  8. remove cooled cake from tin and transfer to serving plae.
  9. Arrange the sliced clementine on the top.
  10. Pour over the syrup.
  11. Leave to cool before serving.

River god spring planter

Just a quick one from me today, I just had to share the new planter I have done for the front porch. It is just starting to bring some Spring color to the garden and I love the way it sets of the river god mask that my dad made me.

Handmade Mother’s day heart keyring gift and gift box

Here is another piece from my Mother’s day craft class I taught last week.

This is a smaller designed gift box and felt heart shaped key ring.

I topped my gift box with a paper rose which can be made simply by cutting a circle out of matching paper and then cutting a spiral to the centre. You then wind up the spiral and stick it when your happy with the shape.

I also used a scrap of the paper to make a matching gift tag using a punch and an eyelet. I think it really finished it off well.

To make the keyring:

  • Cut two heart shapes from red felt.
  • sew a smaller heart shape using chain stitch in the middle. You can read a tutorial of how to do chain stitch here.
  • Then sew seed beads around the chain stitched heart. I used alternate red colours.
  • Then cut a loop of red ribbon and pin this inside the two heart shapes at the top.
  • Blanket stitch around the hearts to secure. You can read a tutorial of how to do blanket stitch here.
