Banana and walnut tray bake recipe

This is my adapted version of a banana loaf recipe. I love banana loaf but often find it can be a little too moist in the middle. Baking it as a tray bake ensures it is fully baked through and is great for serving up for lunchbox treats.

Banana and walnut tray bake recipe

Ingredients
3 large or 4 medium ripe bananas, roughly mashed
250g caster sugar
125g unsalted butter
2 medium eggs
250g self raising flour
120g walnut pieces, chopped

1. Heat your oven to 190◦C or gas mark 5 and grease and line a deep sided baking tray

2. Cream the bananas and sugar together in a mixer until fluffy

3. Add the butter and beat until evenly combined.

4. Beat in the eggs one at a time, adding a spoonful of flour with each.

5. Sift in the remaining flour, then carefully fold in.

6. Fold in the walnut pieces.


7. Spoon the mixture into the baking tray and bake for 30 minutes until golden brown.
