Clementine cake recipe
Ingredients

  • 175ml sunflower oil
  • 200g caster sugar
  • 100g ground almonds
  • 50g white breadcrumbs
  • 2tsp baking powder
  • 4 eggs
  • zest of 5 clementines
  • For the syrup
  • 75g caster sugar
  • juice of 3 clementines


Method

  1. Preheat the oven to 180c gas mark 4.
  2. Grease and line a deep 20cm tin
  3. In a mixer whizz all the cake ingredients until fully combined.
  4. Tip into the prepared tin and bake on a low shelf for 50-55 minutes.
  5. As the cake cools peel two of the zested clemtines and slice into circles.
  6. Make the syrup by combining the 75g caster sugar and the juice of the remaining zested clementines in a saucepan.
  7. Bring to the boil and allow to bubble for 3 minutes
  8. remove cooled cake from tin and transfer to serving plae.
  9. Arrange the sliced clementine on the top.
  10. Pour over the syrup.
  11. Leave to cool before serving.
