Halloumi, apple and pear salad.

  • Juice of 1 lime
  • 1 tsp wholegrain mustard
  • 1 tsp honey
  • 1 tbsp olive oil
  • 2 braburn apples, cored and sliced
  • 1 pear, cored and sliced
  • 1 pack halloumi, sliced
  • 250g carrots, peeled and sliced into matchsticks
  • 100g pecans, roughly chopped
  • 70g mixed salad leaves

  1. To make the dressing, mix together the lime juice, mustard, honey and oil.
  2. Toss the sliced apples and pear in the dressing.
  3. Fry the halloumi for 2-3 minutes on each side until golden brown.
  4. In your serving dish, layer the salad leaves, carrot sticks, apples and pears. 
  5. Top with the sliced halloumi and sprinkle over the pecans.
  6. Finally, pour over the dressing.
