Gluten free Victoria sponge recipe

A light and fluffy tea time treat. Perfect with a cup of tea. Who said being gluten free meant that you had to miss out on cake?
If you find sometimes your sponge sinks slightly when it comes out of the oven, try leaving it in the oven turned off for 5 minutes with the door slightly open. I find this can really help.

Gluten free Victoria sponge recipe
Ingredients:


  • 125g soft margarine
  • 125g caster sugar
  • 3 eggs
  • 125g Gluten free self raising flour ( I used Doves)
  • Pinch of baking powder
  • 1 tbsp icing sugar
  • 2 tbsp jam

Method:

  1. Light oven to gas mark 4 / 180°C
  2. Grease and line 2, 7 inch sandwich tins.
  3. Place margarine, sugar, eggs flour and baking powder into mixing bowl
  4. Mix together with electric whisks. Mixture should become light and fluffy
  5. Divide between 2 baking tins.
  6. Bake for 25-30 minutes or until golden brown
  7. Turn onto a cooling rack and remove the grease proof paper
  8. Spread jam over one of the sponged and sandwich them together
  9. Sprinkle with a little icing sugar
