Here’s a photo of Tuesday nights dish – Stuffed Peppers. They were stuffed with rice, cherry tomatoes, carrot and feta cheese. I made the addition of spring onions as I wanted a stronger flavour to balance out the feta as it can get a bit overpowering. I was overall very pleased with them, the only thing I would want to change is where the breadcrumbs hadn’t quiet covered the rice, it had overcooked and gone to hard.
