|Greek stuffed peppers with oregano saute potatoes|
This was my Greek inspired dinner from last night. I don’t know about anyone else but sometimes I just get fed up cooking the same things. So I wanted to make something different. I stuffed the peppers with rice, red pepper pesto, feta, peas, cherry tomatoes and sweetcorn. Then I baked them in the oven. I par boiled some potatoes and then sliced them coated them with olive oil and oregano and sauted them. I know it’s rather a carbohydrate loaded meal but they serve it like this in Greece, so I don’t care.
