Recipe for Lemon and poppy seed muffins


Lemon and poppy seed muffins

Ingredients
400g self raising flour
1/4 tsp salt
100g caster sugar
2 tbsp black poppy seeds
zest of one lemon
2 eggs
150ml soured cream
100ml Greek yogurt
60g margarine melted
4tbsp sunflower oil

Method

  1. Preheat oven to 200c gas mark 6.
  2. Line a 12 hole muffin tin.
  3. Mix all the dry ingredients together in a bowl.
  4. In a jug, beat the eggs, soured cream, yogurt, butter and oil.
  5. Pour into the dry mix and mix quickly until a lumpy batter is formed.
  6. Do not over mix.
  7. Place heaped spoonfuls into muffin cases.
  8. Bake for 20 minutes
  9. Dust with icing sugar to serve.
