Friday Fun # 5 – butterfly cakes recipe

Butterfly
cakes
Ingredients
100g Self raising flour
100g Margarine            
100g Sugar
Vanilla essence
2 Eggs
For the icing
125g Icing sugar
60g Margarine
12 paper cases
Optional: 50g chocolate chips or 50g sultanas or
raisins.
Equipment
Mixing bowl, scales, wooden spoon, jug, fork, metal
spoon, fairy cake tin.
Method.
1 Preheat the oven to 190c gas mark 5
2 Cream the margarine and sugar until light and
fluffy.
3 Beat the egg and add a little at a time, mix
thoroughly.
4 Add vanilla essence and any optional ingredients.
5 Fold in the flour with the metal spoon.
6 Put a spoonful of the mixture into each of the
paper cases.
7 Bake in the oven for 20 minutes
8 Place on cooling rack and allow to cool before
icing.
9 cut top off the cake and cut in half
10 add a spoonful of icing to top of the cake and
stick ‘wings’ back on.
