Recipe for carrot and orange muffins

Who doesn’t love carrot cake? But sometimes you want something a bit lighter, these carrot and orange muffins have a great light texture and citrus tang that I’m sure you will love.

Carrot and orange muffins

  • 250g self raising flour
  • 200g soft brown sugar
  • 200 mls of sunflower oil
  • zest of 1 orange  finely grated
  • 2 large bananas  mashed
  • 3 medium eggs beaten together
  • 450g carrots – finely grated
  1. Heat
    the oven to 150C/ gas mark 3
  2. Place
    all the dry ingredients and the zest in a mixing bowl
  3. Add
    the grated carrots and mashed banana
  4. Combine
    all these ingredients with the oil and beaten eggs
  5. Spoon
    into muffin cases
  6. Bake
    for 20 minutes until risen and firm to the touch
