Gluten Free Chocolate fudge cake recipe

When I was diagnosed a Coeliac, one of my first thoughts was 'Oh No. No Cake!', but in reality that really isn't the case. You just need to find some winning recipes that work for you. This is definitely a winner for me as it rises well, has great texture but also uses only Cocoa powder for the great chocolate taste and so it becomes a great store cupboard cake as well.

 


Gluten free Chocolate fudge cake

Ingredients

  • 150 g butter
  • 150 g light brown sugar
  • 150 g golden syrup
  • 2 eggs beaten
  • 225 ml milk
  • 45 g cocoa powder
  • 225 g Dove's Gluten free plain flour
  • 1 1/2 tsp gluten free baking powder

For the Icing

  • 4 tbsp cocoa powder
  • 150 g butter
  • 300 g icing sugar
  • 1 1/2 tbsp golden syrup
  • 3 drops of vanilla extract

Instructions

  1. Heat the oven to 180c / gas mark 4.
  2. Grease and line two 20cm sandwich tins.
  3. Melt the butter, sugar and golden syrup in a saucepan. Remove from the heat and allow to cool.
  4. Add the beaten eggs and milk to the saucepan and mix well.
  5. Fold in the flour, cocoa powder and baking powder.
  6. Divide the mixture between the two tins and bake in the oven for 30 minutes.
  7. Once baked, allow to cool in the tins for 5 minutes and then turn out onto a wire rack to cool completely.
  8. To make the icing, mix the cocoa powder with 4 tbsp of hot water in a bowl until smooth. Add the butter, icing sugar, golden syrup and vanilla and beat well.
  9. Sandwich the cool cakes with a little of the icing and then cover the cake with the remaining. Use a palette knife to smooth the icing.
